Here is what do you need to get about 20 bite size pancakes:

  • 1/2 cup all-purpose flour
  • 1 tablespoon of sugar
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of kosher salt
  • 1/2 cup of fat-free plain greek yogurt
  • 1-2 tablespoons of milk, depending on the thickness of the yogurt you use
  • 2 tablespoons of melted and cooled butter
  • 1 egg, lightly beaten

Combine flour, sugar, baking powder, baking soda, and salt in a large bowl and whisk to combine. Add greek yogurt, butter, and lightly beaten egg to the same bowl. Add enough milk to make batter stir-able, 1-2 tablespoons depending on the thickness of the yogurt.

You get a creamy pancake batter

Scoop out a teaspoon full of the batter

Drop the batter in the hot pan. Wait about a minute before you place the lolli pop stick in it, so it will stay in the middle. Then smooth a little bit the surface of the pancake, so you will have two perfect sides.

Space the pancake pops, depending on how large your pan is.

To turn the pancakes you should lift it up a little bit with the spatula, before you grab them at the stick, otherwise you could put the stick out.
